Capparis Goat Cheese
Making cheese by hand is a way of life. Each Capparis cheese reflects the individual style of the country, season, dairy herd and cheese maker. No two hand made chesses are exactly the same.
Capparis Cheese is distinctive. It is made in their modern dairy in the foothill of the world heritage Barrington Tops and close to the picturesque town of Gloucester.
The milk of their cheese comes from their own herd of mostly Anglo Nubian goats. It is noted for its excellent cheese making qualities.
But making cheese at Capparis is a much larger undertaking involving a farming environment that is healthy for the land, the animals and people.
Cheese styles include:
Fresh - soft, light flavours with a slight tang
Feta fresh flavoured, crumbly and salty
White matured for flavour and a creamy texture
